How To Cook The Tastiest Chips Masala

You can never go back to plain chips after trying this.

It is true that potatoes are among the most versatile foods on the planet. You can boil and mash it to make mashed potatoes (mokimo), bake it, or fry it in different forms and ways to get a variety of fried snacks ranging from bhajiato chips and even crisps.

One of the most delicious forms of fried potatoes is chips masala. They are not only spicy and full of flavour, but they can be enjoyed as a snack or as a side dish with your favourite meat.

If you are craving some spicy chips masala, here is a step-by-step recipe to cook the best chips masala you will ever taste.

Ingredients.

You will need the following ingredients to make chips masala:

  • 4 large Irish potatoes.

  • Enough vegetable oil.

  • One large onion (finely chopped).

  • 2 large ripe tomatoes (diced or blended into a paste).

  • 1 medium bell pepper (finely diced).

  • A teaspoon of garlic paste.

  • A teaspoon of ginger paste.

  • A teaspoon of chilli powder.

  • A teaspoon of black pepper.

  • 2 green chillies (finely chopped).

  • Fresh coriander leaves for garnish.

  • Salt to taste.

Pro Tip: Customise your spices according to your liking. You can add more spices or remove the ones listed in the ingredients based on your personal taste and flavours.

Cooking Instructions.

Begin by washing your potatoes thoroughly and peeling them.

Next, slice the potatoes into thin strips or medium-sized wedges using a sharp knife or a potato chipper.

Soak the potato strips in cold water for at least 30 minutes to remove excess starch and make the fries crispy.

After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towel.

Once you have prepared your potato chips, heat your vegetable oil in a large pan until it is hot enough (around 160°C).

Now, carefully add the potato strips to the hot oil, making sure not to overcrowd the pot. You can work on the potato chips in sizable batches.

Fry the potatoes for about 5-7 minutes or until they turn golden brown and crispy.

Using a slotted spoon, remove the fries from the oil and put them on a paper towel to remove excess oil. Let your fries cool down for a bit as you embark on the next stage of the process.

In another pan, pour a tablespoon of cooking oil and heat it on medium heat.

Add your chopped onions and fry until golden brown and wilted, then add your garlic and ginger paste. Continue stirring for one minute or until you get a fragrant scent.

Next, add the chilli powder and black pepper and continue stirring for a few more seconds, then add your diced bell peppers and green chillies and stir fry for an additional 2 minutes. 

Add your tomatoes (or tomato puree) and stir to combine the mixture. Allow the mixtures to cook on low heat until the tomatoes are tender and the mixture looks like a thick paste. 

Now, add your cooled-down potato fries to the ingredients and stir for the ingredients to get into the chips.

Sprinkle some salt on your chips masala and continue mixing for a couple of minutes.

You will then add the coriander leaves and stir for a couple of seconds before removing the chips masala from the heat. 

Your chips masala is ready to eat.

Chips masala is best enjoyed as a side dish with fried chicken, fish, or nyama choma. You can also eat it on its own with some kachumbari and a glass of cold beverage.
